Homemade Pancakes with Fruit Topping.

Dear Food Finders,

BREAKFAST.

That one word brings about so many different feelings. So many possibilities. So many desires resurface.

One of my favorite breakfast meals is simple and light: Pancakes with Fruit.

I make my pancakes in about 5 minutes..IT'S THAT EASY!

Ingredients:
~Betty Crocker pancake mix
~Fresh berries: strawberries, blueberries, raspberries, boysenberries, etc.

Directions:
~make pancakes as directed
TIP: use a nonstick skillet so less butter/fat is used
~plate pancakes and toss berries on top
TIP: omit the syrup used on traditional pancakes to cut calories
~enjoy :-)

Yogurtland

Dear Food Finders,

Frozen Yogurt has become the best treat on a hot day. This past week, it has really been heating up here in LA. So in order to cool down, I can drive to the beach or stop by my favorite frozen yogurt shop to get as much happiness in a little cup. Fro Yo bars have become very very popular in the past 5 years. Ice cream is out and Frozen Yogurt is in people!! I love it, but not because there are between 8-12 different types of yogurt to choose from or the fact that there is a whole bar of toppings from chocolate sprinkles to strawberries to caramel sauce to mochi (so delicious). I truly love it because of how inexpensive it can be!!

My favorite combo is red velvet with cookie dough and mochi on one side of the cup and original tart with strawberries on the other half of the cup. It's sweet and fruit all in one. The red velvet and the tart are absolutely amazing together!

Cooking Channel!

Dear Food Finders,

Ever since school let out a few weeks ago, I've had a lot of free time until summer school starts. So my latest obsession has been watching and lurking the cooking channel. Slow Cooker Chicken Caesar Sandwiches!


Dear Food Finders,

I found this delicious, healthy meal on Pinterest a few weeks ago, so I finally tried it out. And guess what? It's delicious! This recipe is not my own but here is where you can find it: http://www.chef-in-training.com/2012/03/slow-cooker-chicken-caesar-sandwiches/ . As many know, I am an avid caesar salad lover. It's my go-to meal when I can't think of anything else to eat. Well, I've never thought of using my slow cooker to make it, but it really works! Try it! It was really easy to make. The recipe is below:

SLOW COOKER CHICKEN CAESAR SANDWICHES

Ingredients:
2 pounds boneless skinless chicken thighs or breasts (I used Chicken Breasts)
1/2 to 1 cup of your favorite Caesar dressing (I used Kraft Light Caesar)
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley or 2 teaspoons of dried parsley
1/2 teaspoon ground pepper
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular sized hamburger buns

Directions:
-Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours.
-Remove chicken from cooker using a slotted spoon and drain the water from the slow cooker. Place chicken on a cutting board and pull chicken into shreds, discarding any fat.
-Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed evenly.
-Cover and cook on high heat for 30 minutes or until mixture is hot.
-Spoon 1/4 cup mixture onto each slider bun if you are making sliders or more for regular sized buns. Top with extra shredded Parmesan cheese and lettuce to serve.

I completed this meal with a delicious salad composed of romaine lettuce, cucumbers, tomatoes, red/yellow/orange bell peppers, steamed broccoli and a yummy balsamic vinaigrette. I hope you will all try this delicious recipe!!

Go Nuts for Donuts!

Dear Food Finders,

Last weekend I went to San Diego to visit a friend at school. On the way down there, I saw a Krispy Kreme donut shop on the side of the road, and being the food lover that I am, I just had to pull off the freeway and check it out!


Look at those donuts! They have a whole window in the shop that shows exactly how the donuts are made. Especially the delicious glaze that falls over the donuts! DELICIOUS!!

The conveyor belt really caught my eye. I really love this place! I recommend it to anyone and everyone who needs something to feed their sweet tooth.

But don't be too worried because one donut isn't going to ruin your healthy living. Think of it as treating yourself! HEY! You deserve it! ;-)

If you're wondering, then yes, I took a dozen home to my family. :-)

Homemade Snack Pizzas!

Dear Food Finders,

The other day I was in the market about to buy some frozen personal pizzas to snack on during the day, but then something popped up into my head. Why am I buying frozen, artificial food when I can make fresh, natural, and delicious pizza with just a few ingredients? So that is how I created my version of the normal pizza. The recipe is below:

Homemade Mini Snack Pizzas:

Ingredients:
4 Whole Wheat (or White) Sandwich Thins
1 Cup of Store Brand Pizza Sauce (store brands taste exactly like the other brands but they cost less!)
2 Cups of your favorite Cheese: Cheddar, Mozzarella, etc.
4 Mini Red/Yellow/Orange Bell Peppers chopped into bite-sized pieces (you choose the colors! this is your pizza afterall!)
1 Cup of Mini Pepperoni (I used turkey pepperoni but regular is fine too)

Directions:
-Preheat oven to 350 degrees*
-Pull sandwich thins apart and place on a foil lined baking sheet with insides facing upward.
-Place 1 spoonful of pizza sauce on each slice of sandwich thin.
-Sprinkle desired amount of cheese, peppers, and pepperoni on each mini pizza.
-Place in oven for 7-10 minutes or until cheese bubbles.

Prep Time: 10 minutes
Cook Time: 10 minutes

Servings: 2

*don't have an oven because you're a college kid like me? NO PROBLEM! place pizzas on a microwave safe plate for 1 minute and 30 seconds or until cheese bubbles.

VOILA!!

Now you have a delicious, healthy snack that took no time at all to make!
